Baked raspberry cheesecake



You will need:

  • 8 digestive biscuits
  • 50g butter, melted
  • 600g cream cheese
  • 2 tbs plain flour
  • 175g caster sugar
  • vanilla extract
  • 2 eggs plus 1 yolk
  • 142ml pot soured cream
  • 300g punnet raspberries
  • 1 tbsp icing sugar


Directions:
  1. Heat the oven to 180°C. Crush the biscuits in a food processor (or put in a plastic bag and bash with a rolling pin). Mix with the butter. Press into a 20cm springform tin and bake for 5 minutes, then cool.
  2. Beat the cream cheese with the flour, sugar, a few drops of vanilla, eggs, the yolk and soured cream until light and fluffy. Stir in half the raspberries and pour into the tin. Bake for 40 minutes and then check, it should be set but slightly wobbly in the centre. Leave in the tin to cool.
  3. Keep a few raspberries for the top and put the rest in a pan with 1 tbsp icing sugar. Heat until juicy and then squash with a fork. Push through a sieve. Serve the cheesecake with the raspberry sauce and raspberries. Serves 8.

Salam MS,

remember i told u i baked an apricot cheese cake? the recipe's exactly like this 1. just replace the raspberry with apricot. anyway, bcoz of the pinkish red of the raspberry, it looks more yummy!

linalani substitute... hmmm good question. I think you can get fresh strawberries in Malaysia right? the same sour-y taste and colour.

Juraina Tried making it or tried eating it? I've done both. hehehe! preparation was quite easy. eating was heavenly :)

Sarah hihi, if i have the guts to eat more cheesecake this month, i'll try your recipe. Peaches are slightly sweeter, yeah?

i used the 1 in bottle, not in the can. if the canned 1, it's sweeter bcoz they stabilized it with conservative n sugar. but for the bottle 1, it's much fresher. but now, im craving for cekodong pisang only la mama sarah. ok. off to kitchen to fry some. happy mother's day mama sarah!

mummy rizq on the day i made the cheesecake (the photo) - our soured cream was one day expired! so i just left out the ingredient.

it turned out alright! why don't you try it without the soured cream.
